Every Tuesday is Taco Tuesday in our house. My son came up with that idea. He suggested that we dedicate certain days to certain meals. Tacos are a big hit in this house. I’ve had to increase the size of the meal over time because of how much my kids eat. I am sharing how I make our tacos below.
Ingredients
Pico de gallo (click here for recipe)
Hard taco shells (we usually buy a box of 18)
Soft tortillas (I like to get the uncooked soft tortillas and cook them myself) I like the Mi Tienda brand.
Shredded cheese
Sour cream ( I like the Cacique brand)
Black Olives
ground beef
Taco seasoning (I use this recipe and no longer buy packets from the store)
Directions
So, the first thing I like to do is warm the soft tortillas. I have a cast iron griddle that I lay across two of our gas burners and then turn the burners on low. It’s perfect for tortillas. Then I keep the tortillas warm in this. Works great!
Next, I prepare the taco seasoning recipe above. Once that is prepared, I start to brown the meat. I usually brown the meat on medium-high heat, drain it and then sprinkle on the seasoning. I like to add it to the meat and let it cook into it dry for a few minutes. Then, I add about 1/4 cup of water and stir. Turn the temp to low and let simmer while covered.
After the meat is done, I quickly throw the hard taco shells into the oven per their box instructions and begin the pico de gallo listed above. Once that is finished, I can simply pull out the condiments such as shredded cheese, sour cream, black olives, etc. It’s really what you like on your tacos. Sometimes we will do refried beans or some Chalula sauce, too.
That’s really it. Super easy, right? Just takes a little time but so worth it. You really can’t go wrong or mess anything up with this recipe. Give it a try. Maybe your Tuesdays will become Taco Tuesdays, too. 🙂
