First off, I must say this is not my recipe. I came across this online while looking for a recipe to make baked chicken tenders. This was easy to make and the tenders turned out amazing! Here is the recipe and how the process went.
Ingredients
- 1 1/2 cups Panko breadcrumbs
- Cooking spray
- 1 large egg
- 1 tbsp mayo
- 1 1/2 tbsp dijon or yellow mustard
- 2 tbsp flour
- 1/2 tsp salt
- black pepper
- 1 lb chicken tenderloins or cut up breast strips
Directions
Preheat oven to 390 degrees. (I set mine to 400) Measure and pour breadcrumbs onto a cookie sheet and lightly spray with cooking spray. Bake for 3 – 5 minutes. Mine took about 6 – 8 minutes but keep an eye on them because they can go from pale white to dark brown in seconds. 😉 Once they have reached that beautiful golden brown color, pull them out and pour onto a plate.

Take the egg, mayo, mustard, flour, salt and pepper and mix together well in a large enough bowl for dipping. This is one of the best batters I’ve ever tasted. It’s thick, stays on the tender, and has so much flavor.

Set up a dipping station in this order: chicken plate, dipping bowl, breadcrumbs, and then baking rack. I highly suggest using a baking rack on your cookie sheet. It will allow air to circulate around the chicken to make it crispy all over. If you don’t have one, that’s fine; they will still be delicious. If you do, lightly spray with cooking spray before laying the chicken pieces on it.
Process
Take the chicken and dip each piece into the batter letting as much batter drip off as possible. Next, place the chicken into the breadcrumbs gently pressing to coat. Flip each tender to be sure all sides are covered. Place on the cooking rack. After all pieces have been dipped and coated, gently sprinkle with seasoned salt. (Note: the original recipe doesn’t call for this but I added that to mine.)
Bake for 15 – 20 minutes. I baked mine for 20 minutes and they turned out perfect! These tenders will come out with a beautiful golden color and a crunch that makes you question if they aren’t actually fried. My family loves tenders and these are a huge hit in our house. I always make a bowl of honey mustard dipping sauce to go with these and they are simply devoured.
